These gorgeously fluffy buttermilk pancakes are made entirely from scratch... and I'm pretty sure you have almost everything on hand!
Now don't get me wrong. I love pancake mix from a box.
But this recipe has ruined me for those. And I don't think I can ever go back!

Perfectly Fluffy Buttermilk Pancakes
Shopping List
1. 2 1/4 cup of flour
2. 1/3 cup of sugar
3. 2 teaspoons of baking powder
4. 1 teaspoon of baking soda
5. 1/4 teaspoon of salt
6. 6 tablespoons of vegetable oil
7. 2 eggs
8. 2 cups of buttermilk
9. 2 teaspoons of vanilla extract
10. 1 teaspoon of lemon juice
Recipe
1. Mix together your dry ingredients in a large bowl {numbers 1-5}.
2. In another bowl, mix together all of your wet ingredients {numbers 6-10}.
3. Gradually add in your wet ingredients into your dry ingredients and mix together.
4. Do not overmix, as this will result in tough pancakes.
5. Some lumps in the mix is perfectly fine!
6. Preheat your griddle to 350 degrees, or your stove to about med-high heat.
7. Pour on some pancake mix, and let it 'bake' on the pan/griddle for about 2 minutes.
8. Once you see bubbles start to pop up on your uncooked side of your pancakes, flip them to the other side and cook for about 1-2 minutes.
9. Take your pancakes off of the griddle/pan and serve hot with a pad of butter and warm maple syrup!
10. Enjoy!
Feel free to switch up this recipe as well!
Add in strawberries, or apples and cinnamon, or blueberries.
Get crazy, or stay simple. I know your family will love these either way!
