Chorizo, Bacon, and Egg Casserole

Which is exactly why I'm handing over this recipe to you.

Chorizo, Bacon, and Egg Casserole
Shopping List
1. 8-12 eggs {we used 8, but for a thicker casserole, use 12}
2. Red bell pepper, chopped
3. 5 green onions, chopped thinly
4. 1/2 pound of Chorizo 
5. 1/2 pound of bacon
6. Cumin, Garlic Salt, Garlic Powder, Paprika, Cayenne Pepper, and Thyme



Recipe
1. Preheat your oven to 375 degrees. 
2. Spray your 9x13 glass pan with Pam. 
3. Whisk your eggs until fluffy, and add a little milk. 
4. Brown your chorizo and drain it. 
5. Cook your bacon {my favorite way is in the oven}, until your desired crispness. Put it on a paper towel lined plate to drain off the grease. 
6. Place all of your meat at the bottom of the pan.

7. Stir in your red bell peppers and green onions to the eggs. 
8. Whisk in the spices {I just guestimated on all of the amounts so that's why there's no real measurements up there!} to the eggs. 
9. Pour the eggs evenly across the dish.

10. Bake at 375 for about 12-15 mins. Or until the top of your casserole is a bit brown or set to your liking. 
11. Enjoy!

This is seriously so easy. And such a fun way to spice up your regular 'ol eggs in the morning :)

Caprese Lasagna Rolls

I just love anything Caprese. I'm not a huge cheese or tomato fan. But something about the whole thing together with some balsamic vinegar is so enticing to me!



Good news, too, it's fairly healthy! Now, this recipe has noodles in it, so it may not be as healthy as a Caprese salad on its own... but it's sure as heck yummy!

Caprese Lasagna Rolls

Shopping List
1. 8 Lasagna noodles
2. 3/4 cup of Ricotta Cheese
3. 3 1/2 cups of Mozzarella Cheese {shredded}
4. 1 egg white
5. 1/3 cup of Parmesan Cheese {shredded}
6. Black pepper
7. 4 Roma tomatoes, sliced thin
8. Fresh basil leaves, chopped
9. Marinara sauce {Homemade is always best!}




Recipe
1. Cook your lasagna noodles in boiling water with a pinch of salt until al dente.
2. Mix together the Ricotta cheese, 3 cups of the Mozzarella cheese, and the 1 large egg white. 
3. When well mixed, add in Parmesan cheese and black pepper, mix well. 
4. Preheat oven to 350 degrees. 
5. Lay out all of your lasagna noodles on parchment paper.

6. Spread a thin layer of your cheese mixture on your lasagna noodle. Make sure to cover all of the noodle! 
7. Put 4 slices of tomatoes on each noodle. It helps to vary the size of the slices of the tomatoes so that it fits better when you roll them up.


8. Sprinkle on some basil on each of the noodles. 
9. In an 11x7 glass pan, put a small layer of marinara sauce in the bottom to coat the pan.
10. Roll the noodles tightly, all the way, and then place them in the pan, seam side down.
11. Pour your marinara sauce over all of the roll ups in the pan. Make sure you cover them fully or they will dry out.


12. Pour on the rest of your Mozzarella cheese and stick those babies in the oven for 30 minutes!
13. Enjoy!



My man loved these! So you know the drill. If my man approves, then it's definitely good enough for the blog :)

ONE

My man's fave this week??? 

This new dish I came up with :)

Wait 'til y'all try it. You'll be blown out of the water. 

I'm pretty sure the bacon was his favorite part {because duh}, but he swears he loved it all!

And you know what that means... my man approves it, so it's good enough for the blog!

You need this. Now. And don't leave out the mint!


And since we're already talking about food, here's the other recipe I shared with y'all this week!

If there's one suggestion I have for this one, it's to not leave out the extra toppings, like bacon, tomatoes, green onions, and all that good stuff. They really transform the dish!

I just cannot get enough. Does anyone else feel the same about this show? It's totally going on my 'favorite shows forever' list.

THREE

I'm on the hunt for some new shorts this summer! I would love to hear from y'all what you love! 

I'm looking for ones that won't break the bank, denim or colored ones, and ones that do NOT show my booty out the bottom. Aka, no booty shorts! 


But do they need to be super long either? No!

So, I know a lot of people love the J. Crew Factory Chinos, but I'm worried from the reviews that say they've gotten very thin over the years. 


But I love that look! 

Anyways. Just wanted to hear if y'all have any suggestions :)


FOUR

Spring!

It's coming! I can feel it in the air! 

I don't know about where y'all live, but here, it's sunny and 70 degrees today. 


Can you say, glorious?!

You know what I'm loving about Spring so far? 

Brightening up our home! 


I'm adding some much needed greenery, and white accents, to our otherwise warm color paletted home. 

And I'm thinkin' I may just keep all of the stuff up year round! 

That's not a crime is it?! ;)


So all of these pics are my inspiration. And it's coming along!

My new fave makeup product??

Simply put. This one. 

BECCA Backlight Primer.

It gives you a subtle glow from within. And I've have gotten COUNTLESS compliments on the way my skin looks while I'm out and about.
It's a bit on the expensive side if you're not used to buying high end makeup...

BUT WORTH IT.





Hello glowy skin, cork wedges, and warm weather.

Spring and Summer's a comin', ladies! Get ready!
