Easy-Peasy Goulash

I LOVE to cook! Mind you, just because I love to cook does NOT mean that it always comes out just right ;) Sometimes, I just end up throwing the meal out and opting for pizza, just to spare my man's tastebuds for the night!

However, this meal is so Easy-Peasy (hence the name!) that you cannot mess this one up. And those are the types of meals I like. So, enjoy impressing your family with a meal that takes next to nothing to throw together!

Shopping List
1. 2 cans of tomato soup
2. 2 cans of diced tomatoes (I like to use one regular and one italian herbs seasoned)
3. 1 lb of ground beef (sometimes I substitute with italian seasoned turkey meat. So yummy!)
4. 1 box of short cut noodles
5. 1 red onion, chopped
6. 1 tsp of garlic, minced

Recipe
1. Brown the ground beef in a pan over med-high heat, stirring in garlic and red onion. I like to keep our meat in slightly bigger chunks so that they don't 'disappear' in the sauce. 
2. While your beef is browning, boil a pot of water with a dash of salt. Cook short cut noodles al dente. 
3. In a large pot, combine 2 cans of tomato soup and 2 cans of diced tomatoes. I usually drain one can of diced tomatoes and keep one undrained. But if you like a more thick sauce, then feel free to drain them both. 
4. Combine noodles and meat (when both fully cooked) into the large pot with your tomato sauce. 
5. Stir and enjoy :)
