Delicious Broccoli Cheddar Soup
Shopping List
1. 1 white onion, diced
2. 4 carrots, chopped
3. 4 cloves of garlic
4. 1/4 cup of flour
5. 3 cups of chicken stock
6. 2 cups of almond milk
7. 2 large heads of broccoli, chopped into florets
8. 1 teaspoon of Dijon Mustard
9. Salt and Pepper
10. 12 oz. of sharp cheddar, finely shredded
Recipe
1. Heat some olive oil over med-high heat in a large stock pot.
2. Cook your onions and carrots for about 5 minutes, or until the carrots are cooked through. Stir them often to make sure the onions do not burn!
3. Add in your cloves of garlic and cook until the garlic is fragrant.
4. Whisk in your flour.
5. Pour in your chicken stock. Whisk well.
6. Pour in your almond milk, broccoli, Dijon Mustard, salt and pepper.
7. Bring your soup to a simmer, and let cook for around 8-10 minutes. Start checking your broccoli at 6 minutes. You don't want it to over cook! It will happen quickly!
8. About a minute before you think your broccoli will be cooked through, add in your cheese, and whisk your soup together.
9. Once your cheese is melted and your broccoli is cooked through, you're ready to go! Top with whatever you like {croutons, etc.}, or serve with a fresh baguette!
