Mozzarella Meatballs

Ladies.

Wait until you see how easy these are! There's only about 2 extra steps compared to just making regular meatballs. And let me tell you...

Those 2 (or so) extra steps are WORTH IT. 

Before we get into it, let me just say, my man is usually never too excited with food. Not because I'm not a good cook (well I don't think that's why anyways?) but he's just never really excited with food. Unless it's pizza rolls. 

Yes. I'm serious. 

Pizza rolls are his fave. 

BUT. Since I'm not going to eat pizza rolls every day, he's been a little forced to try new foods. 

And let me tell you. These meatballs...

WERE A HIT. 

Try them. Just try them :)

Mozzarella Meatballs
Kinda hard to see (we couldn't wait to eat them, so I didn't get great pics!) but this is where I cut the meatball open over a bowl of spaghetti. Do you see the mozzarella inside?

Shopping List
1. 1 lb of ground beef. (Or ground chicken. But that's next to impossible to find)
2. 1/4 cup chopped onion
3. 1/2 cup shredded parmesan cheese
4. 1/4 cup chopped parsley (honestly, just eyeball this one. I could've done without so much parsley!)
5. 1 tsp black pepper
6. 1 tsp sea salt
7. 1 clove of minced garlic
8. 1/2 tbsp of lemon juice
9. 1 egg
10. Mozzarella cheese (in a cube form)
11. Flour (in a separate bowl)
12. 2 whisked eggs (in a separate bowl)
13. Panko bread crumbs (in a separate bowl)
14. Vegetable oil

Recipe

1. Mix together all of the above ingredients (1-9) and form them into meatballs.
2. Cut out 1/2 inch cubes of mozzarella. Just cut as many cubes as you have of meatballs!
3. Push one cube of mozzarella into one meatball and form the meatball around it so that the cheese is not showing anywhere. 
4. Take your meatball and coat in flour. Then dredge it through the whisked egg. Then coat in panko bread crumbs.
5. Place each meatball into a skillet/pan on med-high heat filled with 1/4 inch of vegetable oil. This will fry/crisp the outside of these meatballs a little bit. Make sure it is crispy on all sides! It only takes about 2 minutes per side. Just keep an eye on them!
6. Heat your oven to 400 degrees. Place them on a baking sheet, and bake them for 15 minutes. 
7. Enjoy!

We enjoyed these over regular spaghetti, but honestly, you could have these by themselves and just dip them in marinara :)
