What's Up Wednesday!

What We're Eating This Week

This week, we have been all about balancing! We are trying to eat healthier, but not so much that we burn ourselves out on it. Here's our meal plan for this week.

Easy Peasy Goulash

Turkey Meatballs
Recipe from Pinterest. Coming later this week. Hint. It includes yummy ingredients ;) 
You could make this up with some toasted buns to make subs or serve it over pasta.

Lemon Pepper Chicken
Super simple recipe. And I'm banking on this being super yummy! It sounds good to the man and I, but this will be my first time making it. Recipe will be up soon on the blog, if it makes the cut! I will be serving it over brown rice for us.

Tacos
We make tacos every week. It's our thing. Yummy! And the best part, my man makes it for us. Can you say off of dinner duty for the night?! Yes I can ;)

Thanksgiving Dinner
Hallelujah for stuffing our bellies! Here's what's on our menu.
1. Rotisserie chicken from Costco (I know, I know ;)

What I'm Reminiscing About
My mama. My mama is the greatest person ever! She recently passed about a month ago. And I was so close to her. Like just about as close as you could get to someone. I've just been reminiscing about all of the wonderful memories we shared. Like when she put a trampoline in our living room. Yep, a huge outdoor trampoline. Right in our living room. So fun. :)

What I'm Loving
I'm loving planning our honeymoon! We are going for a fun and adventurous honeymoon, rather than a relaxing one. I'll be letting you guys know about it later. Possibly in my upcoming Wedding Bells series :)

What We've Been Up To
We have been up to some cool things this past weekend! We have been exploring this new state before we possibly move again. We recently visited the science museum and it was so cool! Not quite as cool as the Denver one, but I'm not sure what can beat that!

What I'm Dreading
Not much really. I sat here staring at this screen for 20 minutes trying to think of something I'm dreading and I couldn't think of much. I think God just gives me too many blessings to dread anything!

What I'm Working On
I am working tirelessly on this new blog! Coming up with a ton of content ideas, and writing up things for you ladies to read. I think this has also helped with not working lately and being able to express myself!

What I'm Excited About
I'm excited to be starting so many new adventures with my man! Our wedding, our honeymoon, our first time buying a home and settling somewhere, getting a new job, getting a puppy, growing our family. I am just so excited for the future. And what an amazing thing when you're optimistic for your future!

What I'm Watching/ Reading
We watch all of the shows listed here. We've also added Chicago Fire, The Grinder, and The Chrisley's Know Best to the list. All different shows, but all great :)

I have just ordered the book Troublemaker by Leah Remini on Amazon. It was a suggestion by Mix and Match Mama. Can't wait to read it! It seems like one that I will not be able to put down. And I love those kinds of books!

What I'm Listening To
Here are a couple of songs I'm listening to. Before I tell you these, you should know. Time and again, my favorite part of any song is the part about 3/4 of the way through where the artist becomes so passionate about their song. The harmonies come together and the artist just sings their heart out. My fave. I also love the beat. If the beat is catchy, I really don't care what the songs about. I'll listen! That's why you'll see the songs don't relate at all to my life.

What I'm Wearing
Mostly workout clothes... Oops. But sometimes, when you're going through a tough time, you just don't wanna have to squeeze into those jeans ;)
BUT I am loving these leggings from Costco. So soft. I have them in striped purple and black. They're long, fleece lined and so comfy.

What I'm Doing This Weekend
We're probably up to more adventures this weekend :) Possibly a bike ride before it gets way too cold, maybe grabbing a starbucks and driving around to look at Christmas lights, maybe buying our first Christmas tree together, maybe getting a new job, maybe going to a local hot springs. Who knows. All I want to do is spend time with my man!

What I'm Looking Forward To Next Month
Um, hello?? Christmas!!! YES!!! My favorite holiday, EVER. Thank you, Jesus for giving us the best reason for the season. You never cease to amaze me with your bravery to let us on earth be forgiven, despite being less than perfect. 
I also enjoy wrapping presents. I love to be creative with it. And I love giving presents. Yes I adore getting presents, but giving someone a present you know they're going to love and seeing their face when they open it is so satisfying. It brings me joy! 


What Else Is New
Well, a bunch! We're trying to move and get a new job, and a new car, and continue with school, and love on each other in the process. Life is a journey. I'm trying to teach myself to love where I'm at while not settling for less than the best. Life is too short to not do what you love. But I'm also trying to live what I preach. Sometimes, it's not as easy as you think. But, God will bring us to where we need to be. Thank you, God for being faithful to us! 

Bonus: What's Your Favorite Christmas Tradition
Well, we are still making new traditions up every year. But one of my absolute favorite ones is on Christmas Eve. We each open up a new pair of pajamas, throw them on, turn on the fireplace, make some crockpot hot cocoa, and watch Polar Express with no lights on except those from the tree :) Then we wake up and go to church on Christmas morning so refreshed and relaxed from our cozy night before and ready to hear, once again, about our amazing baby Jesus! Could it get any better??
