Friday Favorites!

Friday Favorites!! (?!)

That little question mark and exclamation point are me not being able to believe it's already been another week that has gone by!! Oh my goodness. So many blessings. I can't wait to share with you, ladies :)


ONE

Our new furniture! Hooray! We have gone about 4 1/2 months now without furniture. We of course had furniture in Hawai'i, but everything was so expensive to ship, it actually ended up being cheaper to sell it all and then just buy new stuff when we got to the mainland. Of course this has been a much more expensive process than we thought! Ugh. But, God has blessed us with the funds to pay off all of this furniture in it's entirety! Yay for that! It's also taken so long to get our furniture because we wanted to decide on the right things that will eventually go into our forever home, and not just an apartment! 

We wanted to go with an L-shaped couch, or a sectional. But, all of the ones we found that we liked, were horrible quality! So we decided on La-Z-Boy. My mama used to have 2 La-Z-Boy rocker recliners that she would nurse my younger sister and I in. We got the Asher couch in Chestnut, and the Asher rocker recliner in Chestnut as well. The couch is power reclining on both ends, and the chair is manual reclining. The fabric is like microfiber, looks like leather and keeps stains away! 



The throw blanket is from Ralph Lauren, and it's so soft! The pillow (as to which I am still trying to find another couple matching or complementing ones), is from Marshalls. 


TWO

I am so excited even thinking about this possibility! We have been looking into getting a puppy, because I am home all day and would love a dog. 

I grew up with the most wonderful dog ever! Her name was Kendall, and she was an Airedale Terrier. She was a national champion dog who had 3 liters of puppies (all of which my mom let us keep in the kitchen to play with until the breeder took them back to go to their forever homes). 

She was the sweetest dog, and I firmly believe that a dog belongs in this family! However, my man and I are super allergic to dogs, so we have been looking into hypoallergenic dogs! I never had an issue with Kendall, because Airedale Terriers are hypoallergenic. We are looking at several breeds like this, but one of the cutest ones I have found so far is a Airedoodle. Thats right. An Airedale and a Poodle. SO CUTE!!

We preferably want a girl. We are thinking of the names Ruby, Sydney, or Gracie. If we end up getting one (CHRISTMAS??), of course I'll be updating you ladies :)


THREE

Fridays (Or literally any other day ever) is the best day for Mama's Enchiladas!!! The recipe is so easy! Here's me and my mama making them about 1 year ago together. Some of my favorite times :)



Mama's Enchilada's

Shopping List
1. 1 Costco rotisserie chicken, chopped
2. 2 cups of cheese (Mexican)
3. Corn tortillas
4. Olive oil
5. Whatever else you want in your enchiladas (onions, garlic, red bell peppers, etc. I try not to use any watery things. Like salsa, creamed corn, rotel, etc. or it will be soggy)
6. Enchilada sauce
7. Salsa

Recipe
1. Pour and spread just a spoonful or two of enchilada sauce in a 9x13 glass baking dish. Spread all over sides and bottom of dish. 
2. Heat olive oil over medium high heat.
3. Combine chicken, and any other ingredients you want inside your enchiladas, and put in a bowl for easy access. 
4. Lay one corn tortilla in hot oil. Careful of splattering. Spend about 15 seconds on each side, just lightly browning the tortilla, but make sure it does not get hard, or you will not be able to bend it. 
5. Lay cooked tortilla in 9x13. Put in chicken mixture (not too much or you won't be able to roll it). I also put in a small amount of shredded cheese. 
6. Roll the tortilla like a burrito. But do not fold the ends in. Leave them open. 
7. Once you fill your 9x13 dish by repeating this, spoon over the enchilada sauce on each enchilada. I am careful not to overdo it or it will get soggy. 
8. Load it up with cheese! I typically cover my whole dish in a light layer of cheese. 
9. Bake at 375 degrees for about 20-25 minutes or until the cheese is all melted and browning a bit. 
10. Enjoy! These are much easier than it seems. I have thrown all of this together in about 30 minutes (with chopping and all). With time, it'll be like second nature ;) I top with a little bit of crunchy tortilla chips, salsa, and sour cream.

Before baking, no cheese on top yet. I spread any other chicken mixture leftover on top of the enchiladas.

After it's done. You can bet we scarfed this down :)


FOUR

We have decided our Thanksgiving menu for this year! I am big on cooking, and especially for the holidays, but because it is just us this year (my man and I), I am paring it down to what seems like next to nothing. We also are celebrating Thanksgiving on the following Saturday (2 days after Thanksgiving) because of his work schedule. Here's what we'll be eating in The Fashionista Housewife household. 

1. A rotisserie chicken from Costco. Of course. Because I love these. And you need some kind of bird to eat on this holiday, and I don't feel like making a huge turkey for 2 of us. Especially when we aren't big eaters anyways!

2. Green bean casserole. YAY!! I love this stuff. I have the recipe here. I will be halving the recipe for just two of us. 
3. Stuffing. WE. LOVE. STUFFING. But our favorite kind of stuffing... wait for it....
is boxed stuffing. Yep. You heard me. It's only a dollar, you only add water, and it tastes just as good every single time. We usually get the turkey kind, because we usually have turkey. I think we may try the chicken kind this time. I know. RISKY!

There you have it! Our super simple menu. I may even splurge and get us one of those spectacular Chocolate Cakes from Costco. Or I'll just make Mix and Match Mama's Chocolate Chip Pumpkin Pie with an Oreo Crust. Thank you so much Shay for this recipe!
